Looking for something new and different to bake? Go no further then these Vanilla White Choc Blondies with Marshmallows! They are absolutely delicious and perfect to bake for family and friends as a special treat! If you’re not a fan of white chocolate you can switch it out with milk chocolate, dark chocolate or none at all (we definitely prefer some chocolate).
Preheat oven to 160 degrees Celsius and line a 23cm square cake or brownie tin with baking paper.
In a large bowl, combine the melted butter, panela sugar, eggs and vanilla extract with a whisk.
Add the plain flour, baking powder and salt and mix again with a whisk until combined.
Add in the chopped white chocolate and briefly mix together with a spatula or wooden spoon.
Pour the blondie mixture into your prepared tin, and smooth the top with the spatula or wooden spoon you were just using.
Press in at least 9 marshmallows into the mixture, place them so there will be at least one in each slice once the blondie has been cut.
Bake for 20-25 minutes, or until golden. The blondie will have a slight wobble in the centre, and a skewer won’t come out clean if you test it.
Allow the blondie to cool in its tin, then remove and cut into 9 generous slices.
Store in an airtight container, and place slices in the microwave for 10-20 seconds when enjoying the leftovers so they are slightly warm.
