What you’ll need

flour

340g The Healthy Baker Self Raising Flour

butter

120g unsalted butter

brown sugar

250g brown sugar

eggs

2 eggs, beaten

dried apricots

250g dried apricots and/or dates, chopped

Preheat oven to 160 degrees Celsius, and line a 30 x 20 cm slice/lamington tin.

In a small saucepan add the butter and brown sugar. Heat over low/medium heat and stir until the butter and sugar have melted together.

Tip the butter mixture into a large bowl, and allow to cool down if it’s quite hot. Mix in the eggs, then the flour, then the dried apricots/dates until well combined.

Tip the mixture into the prepared tin and using a spatula evenly spread the mixture out. Bake for 35 minutes or until the slice is a light golden colour.

Allow the slice to cool in it’s tin for a few minutes, then remove from the tin and place on a wire rack to cool completely. Once cooled cut in to about 18 pieces. You can store in an airtight container, will keep for about 5 days!
