These little Crystallised Ginger and Almond Biscuits are so delicious and easy – you’ll never need to buy biccies again!

Ingredients

  • 100g unsalted butter, softened
  • 50g caster sugar
  • 100g The Healthy Baker Plain Flour
  • 50g almond meal
  • 70g crystallised ginger, finely chopped

Instructions

Preheat oven to 180 degrees Celsius, and line a large baking tray with baking paper.

In a large bowl, cream the butter and sugar until all combined.

Add the flour, almond meal and crystallised ginger and mix until combined.

Using a teaspoon, take spoonfuls of the mixture and roll into balls and place on the baking tray. Flatten the balls a little so they form fat round discs.

Cook for 15-20 minutes, or until slightly golden. Cool biscuits on their trays or on a wire rack.
