One of the most classic and beloved of all biscuits – the Melting Moment is actually super easy to make and always a hit. Here we have given it a lovely Orange-y filling but you could also add passionfruit and/or lemon to the mix which would be beautiful too. I’ve also made these with lemon curd in the middle (it has to be really well set to hold) which was delicious.
Preheat oven to 180C and grease and line two biscuit trays.
Place the butter in the bowl of an electric mixer and beat until pale and light in consistency.
Add remaining ingredients and beat for 30 seconds or until just combined.
Roll mixture into small balls, about the size of a walnut and place on the baking trays, with about 4cm between each one. Flatten slightly with the tines of a fork (dip in water to stop it sticking to the biscuit dough).
Place in the oven for 15-20 minutes or until pale golden and dry to the touch.
Transfer to a wire rack to cool completely before sandwiching together with the filling, below.
For the filling;
Beat the butter and icing sugar together for a few minutes or until pale and creamy.
Add the zest and juice and beat again until well combined.
