What you’ll need

flour

2 cups The Healthy Baker Self Raising Flour

caster sugar

¼ cup castor sugar, plus extra for sprinkling

pouring cream

½ cup pouring cream

lemonade

½ cup lemonade

milk

¼ cup milk

For the egg wash

eggs

1 1 egg

pouring cream

1 tablespoon pouring cream

Preheat oven to 200C and lightly grease baking tray

Combine all ingredients in a large bowl and gently mix until just combined.

Turn out to a lightly floured work surface and gently bring together into a rough dough, about 3cm thick.

Use a scone cutter or glass dusted with flour to cut out rounds, transfer to the baking tray.

Mix the egg and tbsp cream together and brush tops of scones.

Sprinkle with caster sugar and bake for 20 mins or until golden brown.

Serve with lightly whipped cream and strawberries
