Pikelets with Berries and Peaches

This pikelet recipe is an absolute winner, easy to remember and takes hardly any time to make.
What you’ll need
1 cup The Healthy Baker Plain Flour
½ teaspoon baking powder
1 cup milk
2 tablespoon caster sugar
Combine all ingredients in a large bowl and whisk until you have a smooth, thick batter.
Heat a frying pan on medium and add a splash of oil.
Drop batter on the hot pan, a couple of tablespoons at a time.
As soon as the pikelets begin to bubble, flip them over for a minute on the other side.
Set aside covered loosely with foil before serving with fresh, quartered figs or other seasonal fruit, drizzle with maple syrup if desired.
