Our Cinnamon Swirl Protein Banana Bread is a warm and comforting twist on a classic favourite, combining the sweetness of ripe banana with a rich ribbon of cinnamon running through every slice. Made with The Healthy Baker Protein Banana Bread Mix, it bakes into a beautifully soft and moist loaf while providing an added source of protein. The cinnamon swirl adds a deliciously spiced flavour and an eye-catching finish, making this simple bake feel a little more special. Perfect for breakfast, morning tea, afternoon snacks or lunchboxes, it can be enjoyed fresh from the oven, lightly toasted or served with a little butter. For an extra indulgent touch, finish with a sprinkle of cinnamon sugar before baking or drizzle with a simple glaze once cooled.

Ingredients

  • 400g The Healthy Baker Protein Banana Bread Mix
  • 3 eggs
  • 3 medium (300g) ripe bananas
  • 65g water
  • 125g canola oil

For the cinnamon swirl

  • 30g unsalted butter, melted
  • 2 tablespoon sugar
  • 2 tablespoon brown sugar
  • 1 ½ tablespoon cinnamon, plus extra for dusting

Instructions

Preheat oven to 180C conventional or 160C fan forced.

Grease a large loaf tin.

Place Protein Banana Bread mix, canola oil, eggs, bananas and water into a medium mixing bowl and mix for 1 minute.

Scrape down mixing bowl and mix for a further 1 minute.

Meanwhile, combine cinnamon swirl ingredients in a small bowl and mix together until a paste-like consistency.

Pour half the batter into the greased tin then drizzle with cinnamon mixture. Top with remaining batter and smooth mixture using a palette knife. Drag a butter knife through the loaf to create swirl.

Bake for 50-55 minutes or until a skewer inserted into the centre comes out clean.

Let cool in the loaf tin for 30 minutes.

Remove from loaf tin and place on a cooling rack to cool completely.

Slice into even pieces and enjoy.
