What you’ll need

Protein Pancake Mix

2 cups Protein Pancake Mix


2 cups water

vanilla essence

1 teaspoon vanilla essence

For the board

mixed berries

to serve mixed berries

chocolate chips

to serve chocolate chips

maple syrup

to serve maple syrup

whipped cream

to serve whipped cream


to serve bacon


to serve sprinkles


In a mixing bowl, whisk the pancake mix, water and vanilla together until the mixture is smooth.


Melt some butter in a pan and use the mixture to form small pancakes, about 8cm across. When bubbles form on the top and the pancakes are golden on the underside, flip them and cook them on the other side.


Repeat step 2 until no mixture remains.


To construct your charcuterie board, lay your pancakes in a long curve along the length of the board. Surround with your favourite toppings, we suggest mixed berries, chocolate chips, maple syrup, whipped cream, bacon and sprinkles.
