Dukkah Crackers and Baba Ganoush

These crackers are just delicious, super easy and a great recipe to have up your sleeve when you fancy a biscuit and cheese but haven’t a stash of the former at home.  A bit of flour, some oil and salt and 10 minutes of your time and you’re set!

Ingredients

  • 2 cups The Healthy Baker Self Raising Flour
  • ½ cup water
  • 5 tablespoon auzure Canola Oil, more for brushing
  • 2 tablespoon salt
  • 4 tablespoon dukkah

Instructions

Preheat oven to 180⁰C.

Combine all ingredients except the Dukkah in the bowl of an electric mixer with dough hook and mix for a few minutes or until smooth.

Turn out to a lightly floured surface and knead by hand for a few more minutes. Wrap in plastic and place in the fridge to rest for one hour.

Divide the dough into four pieces.

Roll out the first one as thinly as you possibly can and transfer to a baking tray lined with paper.

Brush with olive oil and sprinkle with the Dukkah.

Repeat with remaining dough and bake for about 20 minutes or until golden.
