One-Bowl Chocolate and Raspberry Cakes

These little cakes are full of flavour and deliciously satisfying. Serve with vanilla or thickened cream.

Ingredients

  • ½ cup caster sugar
  • ½ cup auzure Canola Oil
  • 1 teaspoon vanilla extract
  • 4 eggs
  • ½ cup The Healthy Baker Plain Flour
  • 300g dark chocolate melted
  • ½ cup raspberries

Instructions

Preheat oven to 180⁰C and grease and flour a muffin tin.

Combine the sugar, oil, vanilla and eggs in the Thermomix bowl with butterfly attachment. Mix 1 min/speed 4.

Add flour and chocolate and mix for another minute/speed 3.

Spoon a little of the mixture in one of the tin’s moulds, about 2 tbsp., top with three raspberries and another tablespoon of the mixture.

Repeat until all 12 of the tin’s moulds are full.

Bake for 15 minutes or until the cake tops are only just set.
