What you’ll need

60g butter

1 ripe banana

1 egg, lightly beaten

⅔ cup milk

1 teaspoon vanilla extract

½ cup brown sugar

1 ⅓ cups The Healthy Baker Self Raising Flour
For the sauce

1 cup water

¼ cup golden syrup

⅔ cup soft brown sugar
Preheat oven to 180°C or 160°C fan-forced. Place butter into mixing bowl and melt 2min/100°/speed 1.
Lightly brush four 1 ¼-cup capacity ovenproof dishes with a little of the melted butter.
Add banana, egg, milk and vanilla extract to melted butter in mixing bowl and blend 20sec/speed 8.
Add sugar and flour and combine 40sec/speed 4. Spoon into prepared dishes.
Combine water, golden syrup and sugar in mixing bowl. Cook for 2 min/100°C/speed 1.
Pour over puddings. Bake in oven for 30-35 minutes or until firm to the touch.
Serve with ice-cream.
