Banana Bread

This banana bread is amazing and incredibly simple to make. The whole family will love it. Enjoy it fresh from the oven or toasted with butter for a delicious breakfast.

Ingredients

  • 1 cup The Healthy Baker Self Raising Flour
  • 2 teaspoon ground cinnamon
  • 1 cup caster sugar
  • ½ cup auzure Canola Oil
  • 2 eggs at room temperature
  • 1 teaspoon natural vanilla extract or essence
  • 2 bananas very ripe & mashed
  • 1 ripe banana & sliced in half lengthways

Instructions

Preheat the oven to 180°C/160°C fan-forced. Lightly spray a loaf tin with oil and line with baking paper.

Combine the flour, cinnamon and caster sugar in a large mixing bowl.

Use a fork to whisk together the oil, eggs and vanilla. Add to the flour mixture along with the mashed banana.

Spoon the mixture into the prepared loaf tin. Top with the sliced banana, cut side up.

Bake for 50-55 minutes or until golden and cooked with tested with a skewer.

Set aside in tin for 5 minutes before turning out onto a wire rack to cool.
