What you’ll need

flour

1 cup The Healthy Baker Self Raising Flour

ground cinnamon

2 teaspoon ground cinnamon

caster sugar

1 cup caster sugar

oil

½ cup auzure Canola Oil

eggs

2 eggs at room temperature

vanilla extract

1 teaspoon natural vanilla extract or essence

bananas mashed

2 bananas very ripe & mashed

banana sliced

1 ripe banana & sliced in half lengthways

Preheat the oven to 180°C/160°C fan-forced. Lightly spray a loaf tin with oil and line with baking paper.

Combine the flour, cinnamon and caster sugar in a large mixing bowl.

Use a fork to whisk together the oil, eggs and vanilla. Add to the flour mixture along with the mashed banana.

Spoon the mixture into the prepared loaf tin. Top with the sliced banana, cut side up.

Bake for 50-55 minutes or until golden and cooked with tested with a skewer.

Set aside in tin for 5 minutes before turning out onto a wire rack to cool.
