What you’ll need

3 cups The Healthy Baker Plain Flour

¾ cup butter

caster sugar

⅓ cup caster sugar

For the pecan filling

eggs beaten

4 eggs slightly beaten

caster sugar

1 ½ cups caster sugar

lemon juice

1 ½ cups corn syrup

butter

3 tablespoons butter

vanilla essence

1 ½ teaspoons vanilla essence

pecans

2 ½ cups chopped pecans

Preheat the oven to 180°C. Lightly grease a slice tray.

Beat flour, butter, sugar and salt in a large bowl with electric mixer on low speed until crumbly (mixture will be dry). Press firmly into the tray.

Bake about 20 minutes or until lightly golden brown.

For the filling, combine eggs, sugar, corn syrup, butter, and vanilla. Fold in pecans.

Pour filling over baked layer, spreading evenly. Bake for 25 minutes.

Cool completely. Cut into squares and serve.
