These bite-sized pecan pies are a perfect crowd pleaser! These pecan pie bars boast a tender shortbread crust and all the flavor of pecan pie.
Preheat the oven to 180°C. Lightly grease a slice tray.
Beat flour, butter, sugar and salt in a large bowl with electric mixer on low speed until crumbly (mixture will be dry). Press firmly into the tray.
Bake about 20 minutes or until lightly golden brown.
For the filling, combine eggs, sugar, corn syrup, butter, and vanilla. Fold in pecans.
Pour filling over baked layer, spreading evenly. Bake for 25 minutes.
Cool completely. Cut into squares and serve.
