Mixed Berry Clafoutis

Clafoutis are the perfect dessert for any dinner party!

Ingredients

  • ½ cup almond meal
  • 2 tablespoon The Healthy Baker Plain Flour
  • ⅓ cup caster sugar
  • 2 eggs
  • 2 egg yolks
  • 500g mixed berries
  • 1 cup cream
  • to serve yoghurt or ice cream

Instructions

Preheat oven to 160C. Scatter the base of a shallow oven proof ceramic bowl with berries.

Then in a separate bowl, mix together almond meal, flour, sugar, eggs, yolks and cream.

Pour over the berries and bake in a moderate oven for 25 minutes or until the pudding has risen slightly and the top is a beautiful golden colour.

Serve warm with yoghurt or ice cream.
