What you’ll need

150g Healthy Baker Self-Raising Flour

90g desiccated coconut

110g caster sugar

115g unsalted butter, melted

1 teaspoon vanilla extract
For the passionfruit topping

400ml tinned sweetened condensed milk

2 limes (juice and zest)

4 passionfruits

Preheat oven to 180C and grease and line a 20x20cm slice tin.

Mix all ingredients together in a bowl. Transfer to the slice tin and press down evenly.

Pop in the oven and bake for about 15 minutes or until pale golden in colour.

For the topping, mix together all ingredients. Spread this over the partially cooked base and return to the oven for 15-20 minutes or until just set.

Let cool then slice into squares.
