What you’ll need
1 ½ cup Wholemeal Plain Flour Mix
2 teaspoon baking powder
1 ½ teaspoon cinnamon
1 teaspoon baking soda
2 eggs
1 cup bananas mashed
½ cup rice bran oil
½ cup honey
¾ cup walnuts
1 tablespoon brown sugar

Preheat the oven the 170C and grease a bread tin.

Mash the bananas in a bowl with a fork, then whisk in the eggs, oil and honey. Whisk for 2mins until mixture is light and frothy.

Fold through the flour, baking powder, cinnamon and baking soda. Then finally stir in the walnuts. Pour batter into a greased bread tin, top with remaining banana and then sprinkle over brown sugar. Bake in the oven for 55mins.

Allow to cool in the tin for 10min before removing and cooling on a wire rack.
