What you’ll need

½ cup butter

¾ cup sugar

1 teaspoon baking soda

1 pinch salt

2 eggs

1 teaspoon vanilla essence

1 cup The Healthy Baker Plain Flour

2 cups fresh or frozen berries of your choice

2 tablespoon sugar

1 teaspoon ground cinnamon

Preheat the oven to 180°C. Lightly great a square or round cake tin.

Beat together the butter, sugar, salt, and baking powder until smooth.

Add eggs one at a time and beat until combined.

Stir in the vanilla the gradually fold in the flour until it is all combined.

Spread the batter into your baking tin. Sprinkle fresh berries over the top of the batter.

Combine the sugar and cinnamon and sprinkle over the fruit.

Bake in the over for 35 to 40 minutes (or until a skewer inserted into the centre comes out clean).
