Family Favourite Self- Saucing Chocolate Pudding

With a gooey chocolate sauce underneath, and light sponge on top – this pudding is always a favourite.

Ingredients

  • 90g butter melted
  • ¾ cup milk
  • ⅓ cup caster sugar
  • 2 eggs
  • 1½ cups The Healthy Baker Self Raising Flour
  • ⅓ cup cocoa
  • ⅓ cup cocoa, additional
  • ⅓ cup brown sugar
  • 1½ cups boiling water

Instructions

Preheat the oven to 180°C/160°C fan-forced. Brush an ovenproof dish with a little of the melted butter.

Whisk melted butter, milk, sugar and eggs together in a large bowl. Whisk in flour and cocoa. Pour into the prepared dish.

Combine additional cocoa and brown sugar in a medium bowl. Whisk in boiling water until smooth, gently pour over the pudding.

Bake for 35-40 minutes. Serve with vanilla ice-cream and strawberries.
