90g butter melted

¾ cup milk

⅓ cup caster sugar

2 eggs

1½ cups The Healthy Baker Self Raising Flour

⅓ cup cocoa

⅓ cup cocoa, additional

⅓ cup brown sugar

1½ cups boiling water

Preheat the oven to 180°C/160°C fan-forced. Brush an ovenproof dish with a little of the melted butter.

Whisk melted butter, milk, sugar and eggs together in a large bowl. Whisk in flour and cocoa. Pour into the prepared dish.

Combine additional cocoa and brown sugar in a medium bowl. Whisk in boiling water until smooth, gently pour over the pudding.

Bake for 35-40 minutes. Serve with vanilla ice-cream and strawberries.
