Pizza for breakfast we say Yes! Deliciously sweet you could even have it for dessert!
Preheat oven to 200⁰C.
Roll out pizza dough until you have a disc about 4 mm thick.
Whisk together the ricotta, eggs, vanilla and sugar and spread across the pizza base.
Slice the poached quinces and arrange these atop the ricotta.
Place in the oven and cook for about 15-20 minutes, drizzle over a little honey and sprinkle with the almonds before serving in thick slices with strong coffee!
