Ingredients

  • 3 cups Protein Pancake Mix
  • 3 cups water
  • 2 teaspoon vanilla essence
  • ½ cup mixed berries
  • ⅓ cup chocolate chips
  • to serve icing sugar
  • to serve maple syrup

Instructions

Preheat the oven to 180C and grease a 9x13 inch baking tray.

In a mixing bowl, whisk the pancake mix, water and vanilla together until the mixture is smooth.

Add the mixed berries (chop strawberries first if using them) and chocolate chips to the mix and stir through until evenly incorporated.

Pour the mixture in the baking tray and bake for 25 minutes or until golden brown and cooked through.

Serve while warm, dusted with icing sugar and a drizzle of maple syrup.
