Bloom yeast with water and sugar. Combine salt and flour in a bowl. Combine bloomed yeast and with flour and oil. Knead for 4-5min on a lightly floured surface.
Place in an oiled boil and then cover with plastic wrap and rise at room temp for 30min. Meanwhile preheat the oven to 260C. If you have a pizza stone place it in the oven now.
Tip the pizza dough out onto a lightly floured surface and use your hands to stretch it out to fit your pizza tray. This dough can make a large 12inch pizza or two smaller 8inch pizzas. Top with your favourite toppings and then cook in the oven for 8-10mins.
