In a mixing bowl, whisk together the pancake mix, egg and vanilla.
Gradually add in the water, whisking until the mixture is smooth.
Melt some butter in a pan and pour ¼ of the mixture in, tilting the pan to spread it into a thin circle. When golden on the underside, flip and cook on the other side.
Repeat step 3 with the remaining mixture.
Fold each crepe, and serve with strawberries, maple syrup and whipped cream.
