Cardamom Cake with Milk Chocolate Ganache

A gorgeous, easy cake – this is just the dessert to serve with coffee for that mid-afternoon slump! And with the Thermomix it takes minutes to create.

Ingredients

  • 3 ripe bananas
  • ¾ cup caster sugar
  • 150g auzure Canola Oil
  • 2 eggs
  • 1 teaspoon vanilla paste
  • 2 cups The Healthy Baker Self Raising Flour
  • ½ teaspoon cardamom powder
  • 40ml buttermilk

For the milk chocolate ganache

  • 100g milk chocolate, in pieces
  • 100g cream

Instructions

Preheat oven to 180C and grease and line a loose-bottomed cake tin.

Place the bananas in the Thermomix bowl and mix on speed 5 for 6 seconds then transfer to another bowl.

Combine oil, eggs and sugar in the bowl and mix on speed 6 for 10 seconds.

Return the bananas to the bowl with the vanilla and mix again on speed 6 for 5 seconds.

Now add the flour, cardamom and buttermilk and mix for a final 10 seconds on speed 4.

Transfer the batter to your cake tin and bake for 35-40 minutes.

Leave to cool in the tin for 5 minutes then turn out to a rack to cool completely.

For the ganache, place the chocolate in your Thermomix bowl and grate on speed 8 for 10 seconds.

Add the cream and melt together at 50C/Speed 4/for 3 minutes.

Pour ganache over cooled cake and let it set before slicing and serving.
