What you’ll need

oil

4 tablespoon auzure Canola Oil

zucchinis

2 zucchinis, thinly sliced

Bocconcini

1 cup bocconcini cheese, torn in half

currants

4 tablespoon currants, soaked in verjus or apple cider vinegar

pine nuts

4 tablespoon pine nuts, toasted

rocket

1 handful rocket

prosciutto

4 slices prosciutto

pastry

1 basic dough

Preheat oven to 200C. Roll out pizza dough until about 4 mm thick.

Heat a tablespoon of the olive oil in a frying pan over medium heat until and add the zucchini slices, frying for about 5 minutes or until soft and beginning to turn golden.

Scatter these over the pizza, dot with the bocconcini and drizzle with remaining oil.

Pop in the oven and cook for 15-20 minutes or until golden.

Remove from the oven, top with the currants, pine nuts, rocket and prosciutto. Give another good drizzle of olive oil and serve.
