What you’ll need

almond meal

½ cup almond meal

2 tablespoon The Healthy Baker Plain Flour

caster sugar

⅓ cup caster sugar

eggs

2 eggs

egg yolks

2 egg yolks

mixed berries

500g mixed berries

pouring cream

1 cup cream

yoghurt cream

to serve yoghurt or ice cream

Preheat oven to 160C. Scatter the base of a shallow oven proof ceramic bowl with berries.

Then in a separate bowl, mix together almond meal, flour, sugar, eggs, yolks and cream.

Pour over the berries and bake in a moderate oven for 25 minutes or until the pudding has risen slightly and the top is a beautiful golden colour.

Serve warm with yoghurt or ice cream.
