What you’ll need

bread

8 slices bread, good quality

butter

50g butter

orange marmalade

½ cup orange marmalade

eggs

3 eggs

caster sugar

⅓ cup caster sugar

milk

1 cup milk

pouring cream

1 cup pouring cream

vanilla paste

1 teaspoon vanilla paste

Preheat oven to 180C and lightly grease a 6-cup, ovenproof baking dish.

Butter each piece of bread then spread with the marmalade.

Lay slices across the base of your baking dish.

Whisk together eggs, sugar, milk, cream and vanilla paste and pour this mixture over the bread slices, pressing down so each one is immersed in the custard.

Bake in moderate oven for 25 minutes or until the pudding is just beginning to colour and most of the liquid has been baked into the bread slices.
